The Langham, Melbourne’s Acclaimed Melba Restaurant Spices Up Wednesdays This Winter
May 2016… On Wednesday nights during the winter months of June and July, Melba Restaurant is going to spice up the award-winning eatery’s menu with a month’s worth of mouth-watering dishes inspired from far away places such as Punjab, Tamil Nadu and Mumbai.
Melba’s open Indian kitchen, complete with traditional Tandoor oven, is famous for its made to order naan bread served up with traditional chutneys, pickles and curries and even trendy stuffing such as M&Ms!
Melba’s Indian chefs use authentic techniques, locally sourced fresh produce and
handed down family recipes to create memorable tandoor dishes and rich and flavour laden curries.
To up the ante, Melba’s chefs will be showcasing some of their favourite regional dishes every Wednesday night in June and July.
Wednesday Nights in June
On cold, blustery evenings in June, diners can warm up with batata vada, murgh
chattinad and sabz ananas curry.
Batata vada is one of Mumbai’s favourite street foods. Boiled potatoes are mixed with crushed fresh garlic, green chillies, mustard seeds, turmeric and curry leaves and then dipped in a batter made with besan flour and deep fried and served with fried green chillies.
Murgh chettinad from the land of chettinad inTamil Nadu are moreish pieces of chicken that have been marinated in yogurt, turmeric, chillies, fennel and poppy seeds and black pepper before being cooked slowly over fire.
Sabz ananas curry is a popular Indian vegetable and pineapple curry that originates from the Brahamins community in Karnataka.
Wednesday nights in July
Stay toasty and warm and tuck into hare masale ka murgh angara, kolmi nu patio and melagu pongle.
Hare masale ka murgh angara comes from the Northern state of Punjab and is a
chicken dish marinated with fresh herbs, spices and yogurt before being cooked in an earthen oven on dry embers.
Meanwhile, kolmi nu patio is a well balanced Parsi -style prawn curry with subtle
features sweet, sour and hot flavours and is traditionally served accompanied by yellow hued saffron rice.
Milagu pongle is a popular rice and lentil dish from Tamil Nadu in India’s south. It is well known as a comfort food and is often made as an offering to Gods and is made with ghee, coarsely ground cumin, ginger and pepper.
