The 27-year old Canadian national who trained at Stratford Chef School, Ontario, Canada, renowned as the country’s best chef school, and the Culinary Institute of America, California, is an expert in fusing flavours from Asia and Europe to create stunning dining options.

CHA – Innovative Dining That Refreshes

His latest venture, CHA, will offer adventurous travellers, looking to stimulate their palates, an innovative signature menu based around tea. CHA is universally understood throughout Asia not only as the word for tea but also as a welcome gesture of hospitality or supper. Chef Willemsen will design menus which incorporate the use of tea as well as offering tea matching menus.

Borderless Dining

Guests no longer have to be tied to traditional opening hours or dining with fellow travellers. For that romantic proposal or honeymoon dinner, specially-landscaped areas have been created to offer intimate secret gardens of culinary excitement. Chef Willemsen’s team will serve all that CHA offers as well as more casual dishes or special menus for those seeking a private dining option.

Meanwhile, guests who use Chuan Spa, Asia’s only international spa chain based on the principles of traditional Chinese Medicine, will be able to select from the spa dining menu, extending the journey to well-being.

The Pantry extends the concept of dining when you want, how you want. The only difference is that guests have a personal chef on hand to help out! Chef Willemsen’s team will be onhand to offer practical advice.
