CHEF DE CUISINE JORGE DELGADO
Chef Jorge was born in Chula Vista and raised in Tijuana, Baja California. His fascination with food was instilled at an early age and first inspired by his grandfather, a baker. He grew up helping his mother make burritos from scratch to sell, humble beginnings that prepared him for success in the kitchen, where he works hard and believes in a the close partnership with his culinary team. A graduate of Le Cordon Bleu and Pasadena City College, Chef Jorge brings exquisite culinary experience to The Royce. He began his career in the Caribbean, returning to Los Angeles to work at the Roof on Wilshire under the direction of celebrity Chef Eric Greenspan. At Patina Restaurant Group he cooked side-by-side with exceptional chefs including Jean Pierre at Kendall’s Brassiere and Sydney Hunter at Café Pinot. Most recently he worked at the acclaimed Barton G with Chef Attila Pollok, as well as prestigious events such as the Primetime Emmy Awards. Chef Jorge’s cuisine is primarily rooted in Latin American, Mediterranean and Asian flavors, and he is always looking for innovative ways to elevate recipes he loves, infusing unique aromas to create rich, unforgettable delicacies.
