Since joining the trade in 1993, Eric has amassed a wealth of culinary experience. For over 20 years, he worked in restaurants and luxury hotels across China — including The Langham, Shanghai, Xintiandi. 

 

While Eric adheres to the time-honoured traditions of Cantonese cuisine, he finds ways to add touches of innovation to his dishes.
